I would like to ask how to extract the example of the threejs.org example like this https://saydnaya.amnesty.org/?kind=explore.
Open your browser, press F12 and select the Inspector.
There, look for /js/src, you then have all of the scripts available.

Another question I have is this; I want to execute a script (docs()) when you click text, I've tried using this code:
<p><span class="skill">Documentation can be found here.<script>docs()</script></span></p>
But it doesn't work, any ideas?
Try to use onclick
<p><span class="skill" onclick="docs()">Documentation can be found here.</span></p>
document.getElementsByClass('skill')[0].onclick = docs;

After window.print = "" how can I use javascript to print?
I just want the window.print() can work in Google Script
You can get it out of window's constructor:
window.constructor.prototype.print.call(window);
