Highcharts - 2 synchronized activity gauges - javascript

I am starting from this Highcharts activity gauge and trying to have two of them, aligned horizontally (similar to this other example) and synchronised.
I started modifying the code from the 1st example, based on the 2nd example, and so far I am unsuccessful, the 2nd chart doesn't even display successfully.
What I am doing wrong?

The problem in your example is that you don't have separate charts but one chart with two yAxis. Check Highcharts synchronized charts example here: jsfiddle. Notice, that each chart is separate and inserted into separate div container.
So firstly create two solidgauge type charts and align them horizontally. Then add mousemove trigger on a container div element that contains your charts. Highcharts wrap all browser events and when you hover over charts series you have information about a hovered chart, series etc.
Use hovered series index to invoke onMouseOver() method on proper series in both charts and refresh tooltip with the point from hovered series:

Highchart Activity Gauge always display text in the center

I want to use Highchart's activity gauge as some kind of circle animation surrounding a number/ figure in text form. The default behaviour is the text in the center of the chart will be displayed only if the user hovered over the series.

using jQuery to select and edit nested values in this script

Is it possible to access and change the elements of an object within a function using jQuery? For example, can I use a separate jQuery function to access line 33 of the JS on this JSfiddle and dynamically change the content of the chart title?
(I've tried replacing text: 'Activity', with a reference to an object property such as text: myObj.title, with no luck)

I would suggest to create a separate object for providing options in .chart method (second param). You can set the required value in option.title.text before the chart method executes. No change will be reflected if you change the value after method execute.
But if you want to change the value after the chart has been created then you will have to refer documentation of the Highcharts plugin.

No, the script is self-executing anonymous function, you can't access anything inside it because it'll be out of scope. The scope within that function can only be accessed by other members inside it.
The only way to access something internally is to attache that value or method to the window object from within. This is essentially the "global" scope in Javascript.
window.whatever = 'something';
Then, you'll be able to access it from another script.
console.log(window.whatever);

One way of getting this char could be to use axis line and ticks to cover a chart to create white spaces. Next you could add more points and set stops with a color format that is not supported for a gradient - like hex color format with 3 digits ("#rgb").
